El Jolgorio Tepeztate Mezcal

El Jolgorio Tepeztate Mezcal is a rare and exquisite mezcal made from the wild agave Tepeztate. This agave is known for its complex flavor profile, which is a result of its long maturation process. The agave Tepeztate is harvested after 25 years of growth, and it is then slow-roasted in an underground oven. The roasted agave is then crushed by a mule-drawn tahona, and it is fermented with natural yeasts. The fermented mash is then distilled twice in copper pot stills.
