Barr Hill Tom Cat Barrel-Aged Gin takes our classic Somerset Gin with honey and ages it in American Oak barrels to impart pleasant hint of oak, vanilla, and caramel.
Barrel aging is not an easy task. We search the United States for used American white oak barrels, most of which come from Virginia and Kentucky bourbon distilleries. Then we fill each barrel with 100% grain neutral spirits, let the alcohol soak into the wood, and age our Tom Cat Gin in these barrels for nine months to one year. After they’ve had enough time in the barrel, we take out the gin, blend it three-to-one with our classic London Dry Gin recipe, and bottle it.
