El Silencio Ensamble Mezcal

El Silencio Joven is an Ensamble made with maguey Mexicano, Tobasiche, and Espadin. It is distilled in clay pots, natural spring water, and wild lime and then poured into pint glasses to breathe for 30 days. The result is a bubbly, fresh, herbal spirit that is similar in aroma and taste to fine champagne. It has a hint of sweetness along with floral aromas of sage and apple blossom.

El Silencio Ensamble begins with a base of Maguey Mexicano, the most prized of all agave varietals. It is prized for its elegant notes, vegetal character and soft frutal tones. As this base is distilled, other types of agave are added to enrich and enhance the flavor profile. Tobasiche, a wild agave with a grassy/herbaceous nose, adds a bright mineral component. Espadin adds spice notes that balance out the sweetness, creating exciting complexity and beautiful balance.
